Marinated Tomatoes

Marinated Tomatoes
Paul makes these when we entertain al fresco. We go to the local farmers market and buy fresh locally-grown tomatoes. They are a refreshing start to a barbeque dinner and a nice alternative to a salad. We like to garnish the tomatoes with Nasturtiums or fresh basil.

Ingredients

  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon sugar
  • 1-1/2 teaspoons garlic salt
  • 1-1/2 teaspoons seasoned salt
  • ½ teaspoon ground black pepper
  • ¾ teaspoon dried thyme
  • ½ cup vegetable oil
  • ¼ cup olive oil
  • ½ cup red wine vinegar
  • ½ cup White Wine
  • 3 green onions, chopped
  • 6 -7 large tomatoes cut into 6 wedges
  • Instructions:
    Combine all the ingredients, except the tomatoes, in a large bowl. Whisk well. Place tomatoes into a sealable plastic bag and pour marinade into the bag. Marinate at room temperature for up to 2-3 hours, turning bag occasionally to mix well.

    Serve at room temperature in a colorful bowl.
