Marinated Tomatoes
Marinated Tomatoes
Paul makes these when we entertain al fresco. We go to the local farmers market and buy fresh locally-grown tomatoes. They are a refreshing start to a barbeque dinner and a nice alternative to a salad. We like to garnish the tomatoes with Nasturtiums or fresh basil.
Ingredients
3 tablespoons chopped fresh parsley
1 tablespoon sugar
1-1/2 teaspoons garlic salt
1-1/2 teaspoons seasoned salt
½ teaspoon ground black pepper
¾ teaspoon dried thyme
½ cup vegetable oil
¼ cup olive oil
½ cup red wine vinegar
½ cup White Wine
3 green onions, chopped
6 -7 large tomatoes cut into 6 wedges
Instructions:
Combine all the ingredients, except the tomatoes, in a large bowl. Whisk well.
Place tomatoes into a sealable plastic bag and pour marinade into the bag. Marinate at room temperature for up to 2-3 hours, turning bag occasionally to mix well.
Serve at room temperature in a colorful bowl.
