Linguica Rounds

A family favorite "Linguica Rounds" appetizer from Carol’s Aunt Phyllis that can be made up to two days in advance.

Ingredients:
1 lb. linguica (Portuguese sausage)

Instructions:
Place the lingucia in a small skillet and prick them with the point of a knife. Add water just enough to cover them. Cover the skillet and bring the linguica to a gentle boil. Reduce the heat and continue to simmer for approximately 15 minutes. Drain the linguica and place on paper towel to blot excess liquid. Cool to room temperature and then slice into one inch rounds.

Serve the appetizer on a plate at room temperature with olives, marinated mushrooms and cubes of mild cheese such as Cheddar or Muenster.

This appetizer pairs well with Portuguese Vinho Verde white wine.

Serves 6


Note: If linguica is not available in your area, you can substitute with Kielbasa.
