Homemade Vegetable Soup
The best thing about this Homemade Vegetable Soup is that it is chock full of so many vegetables! If you don’t have all of the vegetables listed here, substitute with other similar ones on hand. If you grow a vegetable garden or have access to a farmer’s market, this homemade vegetable soup recipe will make good use of local fresh produce.
5 Cups water1 cup white wine1 cup corn1 Cup green beans1 Cup chopped green cabbage½ Green pepper diced1 Stalk celery diced1 Potato diced1 chopped onion1 Can stewed tomatoes (12oz. ) 2 Teaspoons garlic salt½ Teaspoon celery salt1 Tablespoon Parsley¼ Teaspoon thyme2 Teaspoons basil3/4 Tablespoon oregano
In a large soup kettle combine the first 9 ingredients and simmer for 1 hour. Season with the remaining 6 ingredients and simmer until flavors are blended well. Serve hot.
