Homemade Vegetable Soup

The best thing about this Homemade Vegetable Soup is that it is chock full of so many vegetables! If you don’t have all of the vegetables listed here, substitute with other similar ones on hand. If you grow a vegetable garden or have access to a farmer’s market, this homemade vegetable soup recipe will make good use of local fresh produce.


Ingredients:

  • 5 Cups water
  • 1 cup white wine
  • 1 cup corn
  • 1 Cup green beans
  • 1 Cup chopped green cabbage
  • ½ Green pepper diced
  • 1 Stalk celery diced
  • 1 Potato diced
  • 1 chopped onion
  • 1 Can stewed tomatoes (12oz. )
  • 2 Teaspoons garlic salt
  • ½ Teaspoon celery salt
  • 1 Tablespoon Parsley
  • ¼ Teaspoon thyme
  • 2 Teaspoons basil
  • 3/4 Tablespoon oregano
  • Instructions:
    In a large soup kettle combine the first 9 ingredients and simmer for 1 hour. Season with the remaining 6 ingredients and simmer until flavors are blended well. Serve hot.

    Serves: 6
