Herbal Chicken Soup
Hearty and Flavorful Easy Soup Recipes
This herbal chicken soup is rich, hearty and flavorful thanks to the variety of herbal ingredients and is one of our personal favorite easy soup recipes. The light cream adds texture and thickness. It is best served as a main course. Serve this easy chicken soup recipe in deep bowls and garnish each with a sprig of rosemary to add interest. A crusty French Baguette with will pair well with this easy chicken soup.
Ingredients:
3 Tablespoons Butter
1 Celery Stalk diced
1 Carrot diced
1 Medium Onion diced
1-1/2 Cups Mushrooms sliced
2 Cups Chicken Stock
1 Cup White Wine
½ Cup Pimento
1-1/2 Cups cooked diced chicken breast
3 Tablespoons Flour
¼ Cup Water
1 Tablespoon dried tarragon
1 Teaspoon dried basil
½ Teaspoon dried rosemary
½ Teaspoon dried thyme
1 Teaspoon onion salt
1 Teaspoon celery salt
1-1/2 Cups light cream
Instructions:
In a soup kettle melt the butter. Saute in the melted butter the celery, carrot, onion and mushrooms for 10-15 minutes. Add the chicken stock, white wine, pimento and diced chicken and simmer for 15-20 minutes. In a small bowl mix together the flour and water. Stir the flower mixture into the soup and continue to simmer until slightly thickened. Season with the tarragon, basil, rosemary, thyme, onion salt and celery salt. Add the light cream and continue to simmer over low heat until ready to serve.
Serves: 6
