New Zealand Green Lip Mussels

Serves Four


2 Pounds fresh New Zealand Green Lip Mussels
1 tablespoon sweet chili sauce
1 tablespoon unsalted butter
1 cup cream
1 cup chardonnay
1 teaspoon garlic puree
¼ teaspoon chopped fresh thyme

Place garlic puree in medium heat sauté pan and cook till lightly browned

Deglaze with wine, and then add sweet chili sauce and cream

Add butter and cook till mixture foams (2minutes)

Add chopped fresh thyme

Add mussels and cover, cook for two minutes till mussels open

Place mussels in bowl, season sauce with salt and pepper

Pour sauce over mussels
