We have been serving this clear mushroom soup to dinner guests for decades and no one ever gets tired of it! A dry white wine works well in this soup and the mushrooms take on the flavor of the wine and the shallots to create a delicious beginning to a dinner party! Garnish with croutons and fresh chopped parsley. To create an interesting effect, we serve this easy soup in a variety of different antique shallow soup bowls.
Ingredients:
2 Cups sliced fresh mushrooms
2-4 Tablespoons green onions or shallots
¾ Cup dry white wine
2 Cans (14oz.) chicken broth
Instructions: In a medium saucepan, mix mushrooms, shallots or green onion and wine. Cook uncovered over medium heat until liquid is reduced by half, a little more than 1/3 cup. Stir in chicken broth. Let simmer for 1-1/2 hours. Serve hot, with croutons, if desired.
