1 lb. pasta/spaghetti
2 medium onions finely chopped
3 bay leaves
1-2 tsp. roasted garlic
2 tbs. dry basil
2 tbs. dry oregano
2 large cans diced tomatoes
1 medium can of tomato sauce
1 small can tomato paste
1/2 to ¾ cup Dry Red Wine
1 lb. white button mushrooms ( stemmed and thinly sliced )
2 lbs. sweet (or mild) Italian sausage (casings removed and cut into bite size pieces )
1 cup freshly grated parmesan cheese
Cajun Sunshine ( hot sauce to taste )
Kosher salt and white pepper to taste
Extra virgin olive oil
Instructions:
In a large sauce pan add approx. 2-3 tbs. of olive oil.
Saute the sausage over medium heat until lightly browned, stirring to break up into smaller pices. Add the onions and sauté until they are translucent. Add the tomatoes, sauce, paste, Red Wine, basil, oregano, garlic, bay leaves and mushrooms. Add Kosher salt and whirte pepper to taste and bring to boil. Simmer uncovered for about 30 minutes.
Cook the pasta in boiling water until done ( al Dente ) and drain well.
Serve the sauce over the cooked pasta and sprinkle with parmesan cheese.
Serves: 4-6
