Italian Pasta Salad What could be better than a glass of crisp white California wine and a refreshing plate of a homemade Ialian pasta salad made with regional fresh vegetables such as California avocados and juicy red tomatoes.

Being a predominantly red wine drinker I tend to sway towards the more oaky tasting whites. A buttery and oaky combination is perfect for my palate.


So picture this… you’re sitting on a shaded patio overlooking a field full of grapes on a bright sunny day at a winery that you've chosen to explore during your visit to Southern California. The breeze bringing the sweet aromas of the area that make the wine you're drinking a combination of floral, buttery, lavender and oak. Each aroma is essential to this region contributing to the wonderful wine. As you relax, you are brought a plate of freshly made avocado pasta made with vegetables grown in the local farms.

It's so common in wine country to share resources such as fresh vegetables and fruit to ensure the enjoyment of visitors. And what better way to do that than to share good food and great wine?

You can taste the creamy texture of the avocado blending perfectly with your glass of chardonnay. The crisp tomato is brilliantly sweet and is the perfect marriage for this pasta salad recipe. You think to yourself, this is truly a wonderful day!

This vegetable pasta salad is easy to make for yourself as well.


Ingredients for Avocado Italian Pasta Salad:

  • 1 lb. Trottole or Top Pasta shape cooked al dente and chilled.
  • 3 ripe but firm avocados.
  • 2 cups diced tomatoes.
  • ½ cup finely diced white onion.
  • ½ cup chopped Italian parsley.
  • ½ cup Kalamata olives, pitted and sliced.
  • Salt & Pepper to taste.
  • Juice of ½ a lemon (optional) .
  • 4 tbsp. olive oil or enough to coat the Italian pasta salad.

  • Instructions:
    Mix all the ingredients together and serve with a piece of crusty Italian bread and of course, a glass of crisp, buttery chardonnay.
